"This recipe is something I chow down after a long day at the garden with harvested garden goods and a little TLC. The spring garlic is the star of the show, it’s pungent from a long winter in the soil and is happy to be marinating with vine fresh cucumber, sprouting basil, and a little dressing to jazz them together. This recipe is about simplicity, it will find itself as your snack, on the picnic table, and your fridge all summer season — taste the sunshine."
Garlic Basil Cucumber Salad by Tara Thomas
INGREDIENTS
1 small cucumber sliced
1 tbsp extra virgin olive oil
1 tsp white wine vinegar
2 tbsp fresh basil
3 cloves of garlic
flaky salt + pepper to season
METHOD
Begin by cutting the produce: slicing cucumber and garlic cloves, then chiffonade the basil. Whisk together the vinegar and olive oil briskly to create a vinaigrette, then combine with the garlic and basil. Plate the salad, season with salt and pepper maybe a side of sourdough!
